This is the tradition of Cognac District, and it is only in Cognac District. Hennessy Cognac is not a product of improvisation. Hennessy is like a loving mother, "raising" Hennessy Cognac with incomparable care, determination and love. To create a top cognac, you must first have the best grape ingredients. The Ugni Blanc grapes produced in Hennessy Vineyards have a light fruity flavor, which is particularly suitable for Hennessy's double distillation process in large copper stills. In order to ensure that the fragrance of cognac reaches its highest and diverse state, Hennessy only uses the water of life carefully selected from four top production areas (Greater Champagne, Small Champagne, Boldry, and High-quality Forest). The top water of life that is honored to be selected will one day become the outstanding Hennessy Cognac.
Secondly, the storage time of the water of life is also very important. The cellaring phase may be longer than the winemaker’s life, so this work tests the winemaker’s imagination. Most of these oaks come from the Tronçais forests and were planted in the seventeenth century to provide the timber needed to build fleets. Every barrel of life water in the cellar has been stored for more than 60 years, including a hundred-year-old aged wine . The older rare treasures are collected in large glass altars protected by wicker baskets to create the rarest and best-quality cognac. The oldest water of life here was brewed when Richard Hennessy was still alive in 1798. In terms of brewing process, Hennessy's brewing method should be considered very standard. The distillation of cognac is divided into two steps: the first time the base wine wine is heated and boiled until boiling, and then the alcohol flows through the "swan neck" through the preheating tank to the condensation chamber, and then flows out of the still through the condensed liquid. The alcohol content is about 27-30 degrees and will be divided into "Wine Head Tête", "Wine Heart Coeur" and "Wine Tail Queue". Only the "Wine Heart" will be retained as the base wine for the second distillation, called "Brouillis". The "wine tip" and "wine tail" are mixed into the preheated base wine and re-distilled.
The second distillation is the same as the first time. It is still divided into "wine head", "wine heart" and "wine tail". Only the wine heart part is still retained. However, the alcohol content obtained this time is as high as 72.4 degrees, and it is called "water of life Eau-de-vie". It takes about 9 liters of wine to produce 1 liter of 70 degrees of water of life.
The initial distillation process lasts about 24 hours, and requires close supervision of the entire process by the distiller and considerable experience. Because at that moment, deciding to transition from "wine head" to "wine heart", which part is added to the base wine and the grasp of temperature will affect the final cognac style.
