Indeed, in Zhengzhou, the provincial capital of Henan, I ate several noodle restaurants during a business trip for a few days.
But I also found that in addition to braised noodles, there are actually many other snacks on the market in Zhengzhou. This post only records the few that I have eaten.

Hu spicy soup: You can easily find the signature Hu spicy soup in many neighborhoods or Erma Road in Zhengzhou. Some will also be labeled "Xiaoyao Town" to show authenticity. This is the most appealing breakfast in Zhengzhou. I saw a lot of people enter the store to eat at 5 o'clock in the morning. The big pot boils, the color is thick and the soup is thick, and it feels that if you don't use the wooden spoon, it will become muddy. I think the so-called spicy flavor refers to the pungent taste of pepper.

Youbing: This thing can be eaten with hot and spicy soup like fried dough sticks. It is baked from a baking pan with a lot of oil, and the filling is mainly vermicelli and star Xu mixed with soy sauce The minced meat mixed with chopped green onion is quite delicious.


Noodle Soup: It looks yellow in the pot, but it looks a bit green when it hits the bowl, and the color is a bit like Beijing bean juice. It is said that it is also made with mung bean flour. It also smells slightly fermented sour, but not as obvious as soybean juice. And the bowl also contains shredded bean curd, peanuts, soybeans, and spinach. In terms of presentation form, it is closer to Jinan's "Tian Moer".

Regan noodles: Because I have lived in Wuhan, I still have feelings for Regan noodles. But before I arrived in Zhengzhou, I didn't expect that there would be so many hot and dry noodle shops in Zhengzhou, and they were not so famous as "Wuhan".

noodles are different from Wuhan, but they are also chewy. The sauce of the noodles, the chopped green onion, and dried radish are also very rich, which tastes delicious.
