Take 50 grams each of star anise, bay leaves, tangerine peel, cinnamon and cloves, 2100 grams of white peony root, 15 grams of cumin, 225 grams of white cardamom, wash them slightly, fry them dry, and wrap them in a spice bag together with 250 grams each of green onion and ginger. 2. Put 15 kilograms of water in the pot, add 300 grams of salt and spice packets, bring to a boil over high heat, reduce to low heat to simmer out the spice flavor, then turn off the heat, cool for 20 minutes, put the blanched pig's trotters into the spice water, soak for 12 hours, take out the pig's trotters and spice packets.
NO.3 Make stewed soup and stewed pig trotters
1. Chop 1 old hen, pork backbone 10kg, and 5kg chicken bones into large pieces respectively. After blanching, put them into a stainless steel bucket, pour 40kg of water, bring to a boil over high heat, then reduce to low heat and simmer slowly. When 20 kg of soup remains, turn off the heat and filter out the residue. 2. Add 2.5 kilograms of cooked chicken fat and spice packets soaked in pig's trotters into the prepared soup, bring to a boil over high heat, then reduce to low heat and simmer for 30 minutes, then add 500 grams of salt, 200 grams each of chicken powder and light soy sauce. , mix 300 grams of concentrated chicken juice, 50 grams of sugar and an appropriate amount of dark soy sauce. After the soup is boiled, add the pig's trotters. Bring to a boil over high heat, then reduce the heat to low and stewing for 1 hour. Turn off the heat and soak for 40-50 minutes. Remove the pig's trotters.
NO.4 Grilled pig's trotters
Place the pig's trotters on the charcoal stove or baking oven . Bake over low heat for 5-8 minutes until the skin is charred and fragrant. Take it out and wrap it evenly to add flavor and mince it. How to make
flavor-increasing chopped: Mix 200g of fried white sesame seeds and 500g of fried peanuts and crush them into coarse grains. Add 100g each of salt and pepper, fried cumin grains, and fried white sesame seeds, and 200g of Huang Feihong spicy crisps that have been crushed in advance and mix well.
