On the surface, the rum and smoke look nothing more than wintering rum Negroni. It traded the usual gin for rum, absinthe for sherry , and campari for Temple Furget’s Gran Classico, another popular bittersweet Italian liqueur. But cocktails are more than just a tweak to the classics. Slide it under a glass cape with flame rosemary sprigs and you'll get a sexy, smoky and movie-like drink.

rum and smoke are part of the smoky cocktail split trend. Some people think that smoky drinks are just a fashion, but there is a reason that cocktail bars around the world are still burning rosemary and sage and sliding them under a glass cover. If done correctly, smoking a cocktail can bring delicious results.

Granted, drinks like rum and smoke lose smoke soon after the lid falls off, but there is a trick that gives this one an advantage: it also has a smoked rosemary simple syrup instead of relying entirely on smoked rosemary branches in a glass, or smoke caught around the drink after serving. Syrup is easy to make and can add complexity to other cocktails. Apart from using it here, it pairs well with mezcal and whiskey drinks – you can try making smoky rosemary with any basic spirit.

Even if the smoke of burning rosemary is subtle, presentation is an important part of any cocktail experience. If you are doing this at home, you need a suitable cover, but give it to your guests or dates and you will be amazed by them.
