The old and new times rush each other, and it’s the end of the year again. The Laba Festival kicks off the Spring Festival and is about to draw an end to the past year.

Laba Festival is also called "Dharma Treasure Festival" and " Enlightenment Meeting". It was originally to commemorate the day when Sakyamuni Buddha became enlightened, and later it gradually became a folk festival. On the day of Laba Festival, in northern my country, in addition to eating Laba porridge , there are many other delicacies.

1. Laba garlic

1. For Laba garlic, you must choose purple-skinned garlic . If you can’t buy purple-skinned garlic, use complete and plump garlic. Break the garlic into small cloves, peel off the skin, and cut off the bottom of the garlic with a knife.
2. Clean the container, scald it with boiling water, and then wipe or hang it dry.
3. Put the peeled garlic cloves in, pour pure rice vinegar to cover the garlic, then add a little high-strength white wine, seal it and put it in a sunny place for a while, then put the bottle in the refrigerator to refrigerate, and wait until the garlic turns green completely.
2, Laba beans

1. Prepare 500 grams of soybeans, soak them overnight, then take them out and cook them in a pot. Drain the cooked soybeans, let them cool, then put them in a clean water-free container, seal them and let them stand for the first fermentation, until they become sticky and salivating.
2. Wash the peeled ginger and cut it into minced ginger. Pour it into the soybean container. Add more salt and crushed chili pepper. Then boil the water from the twelfth lunar month and let it cool. Pour it into the soybeans and stir evenly.
3. Put the evenly mixed soybeans into a lotus leaf jar, seal the mouth of the jar, pour water around the jar to keep it sealed, and ferment again for ten to twenty days before opening the jar for consumption.
3. Laba rice

1. First prepare 150 grams of rice, 20 grams of millet, red beans 20 Gram, barley 20g, mung bean20g, 1 section of Sichuan sausage, half a potato, half a white sweet potato, 1 small section of iron stick yam, 1 small section of lettuce, 1 small piece of taro, a little green onion, appropriate amount of minced ginger and garlic. Wash all beans and rice and set aside.
2. Wash, peel and dice the potatoes, sweet potatoes, yams, lettuce and taro. Steam and dice the sausages. Heat the pot, add the sausages, stir-fry until the oil is released, and remove from the pot. Then add the onion and garlic and saute until fragrant, add the sausage again and stir-fry evenly, then add the diced sweet potatoes and potatoes, stir-fry for a while, add the beans and rice and stir-fry evenly, then add all the remaining ingredients. Stir well and add a small spoon of salt, 2 spoons of light soy sauce, 1 spoon of oyster sauce, and 1 small spoon of sugar and stir evenly.
3. Turn off the heat, pour all the ingredients into the rice cooker, add water to cover the ingredients, cook for three hours, sprinkle in the chopped green onion, stir well and it is delicious.
4. Laba Tofu

1. First make tofu with fine small soybeans and cut into round or square pieces.
2. Apply salt water to the surface of the tofu, dig a small hole on the top, and add an appropriate amount of salt.
3. Put the tofu coated with salt outdoors and bake it slowly in the sun to absorb the salt and dry it in the sun.
