[Method]

1~2. Boil the green onion and ginger in water for a few minutes, then set aside to cool.
3~4. Add half an egg's egg white, salt, and a spoonful of original lotus root starch or cornstarch (a small spoon for eating) to the shrimp meat. Mix well first, then pour the onion and ginger water while repeatedly grabbing and pinching the shrimp meat. Grab and pinch until it becomes sticky and thick. Let it sit for 30 minutes.

Add another egg to the remaining eggs and beat evenly. Brush the pan with thin oil, pour in the egg liquid, spread until both sides are solidified, then scoop out and cut into strips.

1~2. Take another pot and add an appropriate amount of water. After the water boils, use a spoon to form a round shape of shrimp meat puree and put it into the pot and cook for two or three minutes.

Add some seaweed, eggs, and salt, continue to cook for about 2 minutes, and sprinkle some chopped green onion and a little sesame oil before serving.

1. You don’t need to chop the shrimp meat too finely, it will taste better if it is a little grainy.
2. Egg white must be added. After adding egg white, the shrimp will be smooth and elastic. Adding original lotus root starch can lock the moisture of the shrimp meat, making the taste more tender and elastic. The original lotus root starch can be replaced with corn starch. Our family usually uses original lotus root starch for thickening. It has the same effect as corn starch, but the nutrients are very different.
3. There is no need to add cooking wine, just add green onion and ginger water, which mainly plays the role of removing the fishy smell.

[Scallion Pancakes]

Each dough I made is about 90 grams. Brush the surface with thin oil. Turn a large bowl upside down and let the dough rest for about 30 minutes.

7~9. After it is relaxed, roll it out thinly and then into larger size.

If you want a better texture, you can add some oil to the dough before kneading it. The texture will be crispier, but more oil will increase the calories.
2. Brush oil to wake up the dough. The dough will be more extensible. You don’t have to worry about breaking the dough when rolling it very thin.
3. Be sure to bake it with the lid on, as it will cook faster and the cake will be softer and taste better.

【Boiled Rapeseed】
