Chinese Guide (Reporter Sun Hui) Japan's Michelin Tire Company announced the restaurant rating book "Michelin Guide Tokyo 2021" on December 7. The number of "three-star" restaurants increased by 1 compared with last year, reaching 12, with 42 "two-star" restaurants and 158 "one-star". "Chanhua" has been promoted from "two-star" to "three-star" and became the first Chinese restaurant in Japan to be on the list.

Chinese restaurant "Tea Chanhua" opened in 2017 on a corner of the high-end residential street in Nanmabu, Tokyo. Chef Tomoya Kawada once studied Chinese food at the "Amabu Yangtze River" in Tokyo, and studied Japanese cuisine at the Michelin three-star restaurant "Longyin". Later, he participated in the planning to establish "Xiangyun Longyin" in Taiwan, and served as the sous chef. He also studied at the "Pinzhen Building" and "Mingdu Restaurant" in Hong Kong. Through these experiences, we use Japanese seasonal ingredients, Chinese cooking skills and charcoal grilling to formulate menus to promote "Japanese Chinese cuisine" to the world.
"Chat Chanhua" with dishes, in addition to the wine matching sets including red wine, Japanese wine and Shaoxing wine , there is also a tea matching set, which provides Chinese tea and Japanese tea brewed at various temperatures and methods. The tea and water matching package solution originated from the idea that chef Kawada said that "he hopes that guests who don't like to drink can also enjoy the combination with the dishes." The store provides four language services in " Japanese , Chinese, English and French", which allows foreign guests to have a pleasant meal.
To commend restaurants that are proactive in reducing food loss and environmentally friendly production, " Michelin Guide Tokyo 2021" also set up a new "Green Star" award for evaluating sustainable development. Six restaurants centered on French food such as "Quintessence" that won the highest rated "Samsung" for 14 consecutive years and "L'Effervescence" that won the new "Samsung" for 14 consecutive years were selected.
"Michelin Guide Tokyo 2021" contains 480 stores, including 446 stores, 34 accommodation facilities, 53 new catering stores and 7 accommodation facilities. There are 234 stores on the list of "Bipiden Food Recommendations" that have no star rating but can enjoy high-quality catering within 6,000 yen.
