E cuisine was renamed Chu cuisine and ranked among the top ten cuisines in the country. There are eight cuisines in my country, namely Shandong, Sichuan, Guangdong, Jiangsu, Fujian, Zhejiang, Hunan and Huizhou. Hubei is rich in water systems and plains, and the products are extremely rich. Why hasn't it been selected into the eight major cuisines?
Looking at these eight major cuisines, basically each of them has extremely prominent characteristics, which make people savour. For example, Sichuan cuisine is famous for its spicy, Hunan cuisine is spicy, and Hui cuisine is fresh and spicy.

Chu was the largest vassal state in the South during the Spring and Autumn Period and the Warring States Period. The core of its sphere of influence was in Hubei and Hunan. The core capital city has been in Jingzhou, Hubei for a long time, so Hubei is also called "Jingchu".
Chu cuisine is now among the top ten cuisines in the country.
Chu cuisine standard released, the first batch of 21 dishes
In December 2020, Hubei announced the "Chu cuisine standard", and the first batch of 21 Chu dishes was shortlisted. The so-called Chu cuisine standard by
is to formulate standards for the name, materials, and production process of Chu cuisine to ensure the reproducibility of Chu cuisine and facilitate the development and inheritance of Chu cuisine. Among these 21 Chu dishes,
represents the essence of Hubei cuisine for thousands of years. Among the 21 dishes, the Jianghan Plain area accounts for nearly half, including Jingsha turtle, Qianjiang oil braised prawns, Mianyang three steamed, Zhongxiang flat dragon vegetables, ribs and lotus root soup, Leizhou Bay fishballs, Honghu duck braised lotus roots , Minced chicken, pen holder, fish maw, etc.
The state of Chu has been the capital of Jingzhou for 400 years, and the Jingzhou cuisine in Chu cuisine is naturally the soul. Jingzhou has 4 dishes selected, namely Jingsha Turtle (Jingzhou), Pork Ribs and Lotus Root Soup (Honghu and other places), Honghu Duck Braised Lotus Root (Honghu), and Mushroom Bijia Fish Maw (Shitou).
At the end of 2019, Hubei released the top ten famous Chu dishes. They are: Braised Wuchang fish with green onion, braised catfish, coral mandarin fish, Jingshang turtle, casserole fish cake fish balls, Mianyang three steamed, Huangzhou Dongpo meat, Qianjiang oil braised crayfish, bacon stir-fried vegetable scallop, lotus root ribs soup.
The top ten famous Chu cuisine dishes are basically selected in the first batch of 21 Chu cuisine standards, but there are two exceptions, one of which is casserole fish cake fishball . For the fishballs, the fishballs from Leizhouwan were chosen in the Chu cuisine standard, but the fish cakes unfortunately failed.
fishballs are very common in Jianghan Plain, and they can be made in most places, even in the whole country. But fish cake is definitely Jingzhou's signature dish, it should be difficult to see outside of Jianghan Plain.
Why is fish ball selected, but Jingzhou fish cake is missing? Personally,
believes that the reasons should be as follows:
First, since it is used as a standard for Chu cuisine, it is to build the reputation of Chu cuisine and facilitate national promotion. Therefore, the choice of dishes is biased towards the ones with a high degree of public awareness.
Second, Zhongxiang Panlong dishes are actually similar to Jingzhou fish cakes, except that the ratio of pork to fish is slightly different. But the history of Panlongcai is clearer and more familiar.
Although Jingzhou fish cake was not selected as the first batch of Chu cuisine standards, it does not prevent Jingzhou cuisine from being the most important part of Chu cuisine. Chu cuisine is dominated by aquatic products, and Jingzhou is the largest market for freshwater products in my country.
In fact, in addition to Jingzhou fish cakes, Jingzhou also has famous dishes such as boiled fish, eel, Dujia chicken, and Gong'an beef sanxian hot pot.
