I instantly remembered this Scottish single malt whiskey brand called Mortlach, which comes from the Speyside production area known for its soft flower and fruit aroma style. For me, who was "not deeply involved in power" back then, I was completely unimaginable about it, and I was only full of curiosity.

, with curiosity, when I went to the whiskey bar, I deliberately searched for its existence on the wine rack, bought a single cup from the bartender , took the tulips and smelled the fragrance, moved it under my nose and sniffed it gently. The rich and deep fragrance was the first impression Muhe gave me. The woody and spices were quite thick. Take a sip, and the sweet and spicy aroma and the very recognizable "meat texture" were deeply imprinted in my taste memory. This is my first experience of Muhe, which allows me to experience the feeling of falling in love with a wine at first sight.

We caught up with the good time when single malt whiskey flourished in China, and gradually came into contact with the increasingly rich and diverse whiskey models. Muhe's mellow personality and the flavor impact it brings to the taste buds are still so incomparable. In the following days, I drank more Muhe wine and tried to understand the mystery of its iconic 2.81 distillation method from the book, but found that it was not that easy.

A study tour in Scotland in 2019 led by Mr. Lu Qingsheng, chief consultant of Diageo Whisky Academy (DWA), he went to Duff Town in Speyse area to visit the Muhe Distillery, which was founded in 1823 and existed as the first legal whisky distillery in the town. After going deep into the core of the winery, we finally began to see the true essence of "Beasts".

Founder Covey and his son established the foundation of the Much Distillery with an outstanding scientific perspective. Railway transportation engineer George Covey has strong logical ability. He learned the skills of wine making, and applied his precise concepts from his engineering period to whiskey brewing. Alexander Covey is a famous doctor of medicine. After graduation, he practiced medicine in Asia until his father recalled him to run the winery together. Covey and his son, who have a strong mind and scientific education background, built a world-famous distillation system.

Scotch whiskey is mostly used for secondary distillation, Irish whiskey is more commonly used for three distillation, while Much's distillation system consisting of three crude ale distillers and three spirit distillers is a unique multi-distillation method - the 2.81 distillation method. The wine flows through the mixed pipes and the six stills in complex arrangements. After separation, reseparation, mixed distillation and redistillation, it undergoes refinement again and again.

Teacher Lu taught me that if you want to fully understand a winery, you need to go through two aspects: one is to understand the winery's full-stage process technology, and thus to know the winery's style and flavor structure; the other is to systematically and comprehensively use professional tasting methods to taste the winery's products. I have studied in Muhe Winery and have also drank some regular models of Muhe from different years, theme series and personalized single barrels, and I have consciously understood the brand. Until an event two days ago, I once again expanded my cognitive boundaries about Muhe.

On the night of getting deeper autumn, I came to the Bund Architecture Expo Group on the Huangpu River. Under the guidance of a dedicated person, I entered Muhe’s “Midnight Secret Realm” as if I were traveling through time and space. As soon as he arrived at the entrance, artist Liu Jiayu led the river of life, which had a strong flavor of Muhe, to his eyes with virtual images. The turbulent river light and shadow continued to emerge like every collision of rationality and wildness.

The sharp momentum is hidden in the secret realm and displayed in the midnight. On the spot, I obtained a "Midnight Book" to reveal the "Law of Sour" by Muhe. Using three secret props as clues, I went deep into the secret realm of the night, opened up the mysterious mechanism layer by layer, and learned about Muhe's three breakthroughs and innovative spirit of pioneers. In the deep and immersive sensory experience, we jointly witnessed the release of the 2022 limited edition of the 30-year single malt whiskey, known as the "midnight secret collection".

From classic European oak barrel to American white oak barrels, from heavy buckets to brand new barrels, I have drunk many kinds of barrel mortars over the years, but this new high-year Muhe used barrel combination form for 30 years is also the first time I have come into contact with it. It pioneered the selection of three special oak barrels, Bordeaux red wine barrels, Calvados oak barrels and Guatemalan rum barrels for secondary maturation, and finally merged the wine into a quarter-custom barrel.

This comes from the current Much chief deployment master Dr. Craig Wilson's breakthrough attempt to use the barrel technique. I had the honor of having an in-depth exchange with Dr. Wilson at Much Winery. He said that Much has always pursued the flavor of pure and wildness, and hopes to use new barrel attempts to deeply exert Much's pure and mature wildness, while building a balanced and complex beauty. After tasting this Much for 30 years, I must admire that Dr. Wilson has fulfilled his pursuit.

Dave Bloom also shared his tasting experience in video format. "I can clearly feel that the mellow style of Much has been pushed up another level in this new 30-year work. The full ancient golden wine is intertwined with the complex sweetness of blackberries, toffee , and black rum. The iconic meaty and woody flavor are combined into a warm, rich, long and powerful luxury taste in a slight scent of black pepper."

This wine, while maintaining the mellow style and the iconic "meat texture", brings me a new understanding of Much: The strong but not ostentatious body shows restraint and restraint without showing sharpness. The innovative use of barrels brings breakthrough and inheritance to show the courage to break through. The overall situation is very consistent with Dr. Wilson's understanding of the style of Muhe's winery in the video: "Muhe is very suitable for slowly feeling it after changing day and night. When your sensory tentacles gradually become sharp, the mellow flavor tension will be released."

At this level of high-year whiskey, it should be delicious. What I value more is whether it can achieve the ultimate mellow brew with excellent flavor and balance, vitality and personality expression on the basis of inheriting the characteristics of the distillery, through tempering the flavor of time.
