Ingredients: 5 free-range eggs (only 4 large eggs are needed, and the egg whites are exactly 150 grams), fine sugar (20 grams + 60 grams), 90 grams of milk, 60 grams of vegetable oil, 80 grams of cake flour
filling : 4200 grams of cream cheese, 20 grams of sugar, a little pumpkin puree, a little chocolate
Method:
1. Fresh eggs, preferably freshly taken out of the refrigerator, separate the yolks and whites, and put them into two different beaters. In the egg basin.
2. Add 20 grams of fine sugar to the egg yolks and stir evenly.
3. Add milk and vegetable oil to the egg yolks and mix thoroughly.
4. Sift in the low-gluten flour and stir.
5. Get a uniform and fine egg yolk batter, set it aside and let it rest.
6. Add fine sugar to the egg whites in 3 batches, and beat with an electric egg beater at high speed until it reaches the hook state. It does not need to be too hard.
7. Pick the egg white paste three times, mix the egg whites and egg yolks, and mix or stir to avoid defoaming. Pour the mixed batter into the egg white paste for the last time and mix evenly.
8. Finally, a uniform and delicate cake batter is obtained.
9. Place oiled paper on a baking sheet and pour the cake batter.
10. Use a scraper to smooth the batter.
11. Preheat the oven to 170 degrees for about 20 minutes. (The temperature and time of different ovens will be different. If it is a steam oven, try 150~160 degrees for 30 minutes)
12. After taking it out of the oven, take out the oil paper, turn it upside down, tear off the oil paper, and cool it.
13. Cut off the surrounding irregular parts and use a round mold to cut out round cake slices. If you don't have a mold, you can also use the mouth of a cup or bowl.
14. I cut 8 small round slices, just enough to make 4 groups of chickens. The remaining scraps were eaten directly, and the surrounding pieces were cut into cubes. I also made a few pork floss and scallops .
15. Next, make the fillings.
I used cheese filling. 200 grams of cream cheese, also called cream cheese, add 20 grams of sugar and mix well until smooth. You can use an electric whisk or a spatula. I think this sweetness is just right.
16. Take a piece of cake and spread the filling on the colored side.
17. Cover with another piece of cake. A total of 4 pieces can be made.
If you have milk powder, you can apply milk powder all around to make it feel fluffy.
18. The next step is to draw the eyes and mouth.
For the eyes, I used melted chocolate, and for the mouth, I used the same cheese filling plus Beibei pumpkin puree. Steam the Beibei pumpkin, add a little bit of the remaining cheese filling, and mix it until the color is yellow and just right.
19. Put the chocolate and pumpkin cheese filling into a piping bag, cut a small opening at the bottom, and you can use it.
20. Use chocolate to dot the eyes, and then use cheese to draw the mouth. Its mouth is a horizontal "U", which is very special!
