Yesterday, the 2021 Asia’s 50 Best Restaurants list was announced as scheduled. Since
is the updated list every year, the ranking of restaurants is naturally no problem. As always, there are ups and downs, each with joys and sorrows. For many domestic food lovers, the focus of this list must be that Hong Kong's large house has become the first Chinese restaurant to win the top spot.
From the perspective of the absolute standard of the restaurant, the Grand House is certainly not the number one in Asia, and it is not even listed in the first echelon in my heart. But as a Chinese, I am still very happy about its winning title. When "concept" and "stance" are contrary to, the latter can always ruthlessly suppress the former, which is also a solid part of the map of human nature.

large-class building, Hong Kong, China, the special situation that started last year has had a different impact on various countries until today. The review rules of Asia’s 50 Best Restaurants have been adjusted accordingly. The change in the vote ratio of judges in various regions has given the popular local restaurants that are praised by the country (local) people to take the lead in the selection, while the destination restaurants that are good at creating "one period and one meeting" surprises have fewer opportunities to get votes. This is also fully reflected in the final result.
can obviously affect the evaluation rules of the results, and it can also indirectly prove the non-objectivity of the list itself (non-derogatory) - no different from the past. Most of the celebrities who were in the list can't really represent the best restaurants in Asia. But even so, the list can still make people pay more attention. After all, compared to the "objectivity" that is difficult to distinguish, when the national and regional attributes of the restaurant are emphasized and given a quantifiable ranking, our curiosity and group consciousness are stimulated; and, more importantly, the influence that cannot be ignored also makes this list more or less a vane to influence the aesthetics of food. Even if this vane is small, it can hatch several butterflies that produce effects. We have a natural obsession with the "future", and focusing on the list related to the "future" is an interesting thing.

ranking is not critical, so there is no need to give details about it. I wrote some text about food when the Asia’s 50 Best Restaurants was announced last year. It would be better to do this year and put a little something I want to say here. The
article is finally listed among the top 50 restaurants on this list.

Why do we love food and restaurants? In the superficial sense, eating is a person's physical instinctive desire, which can bring instinctive satisfaction and happiness. If we explore where this happiness comes from, we may explain it from the perspective of Laplace's determinism: we need to consume various nutrients from a large amount of food to maintain survival and reproduction. The "delicious" signals transmitted from our minds exist only for us to "eat" and are considered a rooted self-protection.
's love for food is of course far from being covered by this innate animal nature. Following the survival, people have social needs, expectations for love and "beauty"... It is difficult for ultimate delicious food to meet all human needs at the same time, but the carrier of food - restaurants - can do it in a curve to save the country to a certain extent - whether it is food, environment, integrity, social functions, and self-cognition, first-class restaurants can allow people in it to get a lot of satisfaction. It has been said before that enjoying a meal in a wonderful restaurant is the only thing that (possibly) meets Maslow's seventh floor needs at the same time. It deserves our attention more than I imagined.

has simple and charming food, and at the same time comforting the multi-layer perception, it has made more and more people around them who are passionate about food, but most people stop at "craving".
For real food lovers, everything is just beginning.
You might as well look at the photo below first, from "The Destroyed Room" shot by Canadian artist in the middle of the last century. Many people will think that this picture with messy content is not a masterpiece, and the picture makes people confused. If told that this was Wall's photo of a prostitute's bedroom, the keen ones might find a feeling: it seemed like the house had just been subjected to a catastrophe. Could it be that the photographer wants to use exaggerated sets to express the inner suffering of the victims directly? Of course, this photo of

is not that simple. In fact, this is Wall's creation after referring to Eugen de la Croix's classic work "The Death of Sadan Napalus" completed in the early 19th century. As long as you compare the two paintings, you can easily find their echoes: the damaged mattress in the center of the picture of "Quillus" is nude with the assassinated person at the same position as the "Sa"; the white sculptures on the bookcase of "Quillus" are also in the same shape as the "Sa"; they all have diagonal compositions from the upper left to the lower right (the cracks in the mattress better achieve this); the light source distribution of the two is exactly the same; the white table and dark red walls in the lower right corner of "Quillus" connect the crazy and confusing colors of "Sa", which is also the color used by Delacroix.

Wal used this work to pay tribute to Delacrova's past creations (he did this to many artists), both of which reflect the destructive nature of distorted violence and desire to the times. Wall hid some of the themes in the photo that were not fully displayed in it, clearly hidden in the painting a hundred years ago.
No matter how much you understand art, if you don’t know the innate relationship between the two paintings, you will not be able to truly understand "The Destroyed Room". Regarding what Wall did, Will Gumpetz, a well-known British art critic, compared it to "A crossword game of art" .

Such a crossword game will appear in many fields of "hobby", leading to the philosophy of "deep understanding". It seems that we think of House NA from the library of Musashino University of Fine Arts in , Fujimoto Junsuke, ; from Mozart's K491 to K466; from "The Exposure of Love" to "1Q84"; from the taro stem of kura, to the hazy memory of the Beijing flavor... Diners visited a large number of restaurants around the world like Captain Cook, knowing the possibilities of each ingredient, and understanding the genre, cooking changes and preferences of each chef. After knowing everything, I realized that I was really obsessed with this hobby called "food" or "visiting restaurants". Since then, a certain sense of happiness has become possible.

No matter how delicious the restaurant is, as long as it is self-centered, pure, unique, and "no one else", it can enrich our understanding of food, and all are precious "information". The increase in the amount of information supplements the crossword game in this field, laying out the paths in the heart, and then irrigating and nourishing it. In this way, every food experience and every dish after that seemed to drive the domino of memory and radiate the seeds of imagination, and it also seemed to touch the lead of the thunder array, allowing thoughts to be secretly awakened at the moment of perception, and gain a deep sense of existence and happiness in the chain of memory.
People who love food do not have an innate preference for delicious food, but rather have completed the crossword game about food over the long years.

Therefore, one of the criteria for judging restaurants in my mind is how effective "information amount" it can provide us. chefs can advocate minimalism in cooking, but in the delivery of information (original place, method of making, source, proposition, culture, etc.) must be extremely complicated and detailed in the delivery of cooking (and other aspects of the restaurant, this is omitted). Unfortunately, many restaurants have a completely opposite understanding. A restaurant that cannot give diners a lot of information is at most a third-rate work.
Most experts in the hobby have experienced such a growth process: starting from being attracted to a single thing (a song, a glass of wine, a skydiving, a movie...), and accumulated knowledge and experience (information amount) through gradual attempts, and slowly figured out the "inner system" in this field. For a long time since then, this system has been colored and filled in little by little, becoming clear in the heart, gradually becoming vivid, mature and complete.

At this time, this hobby has become an important thing close to pursuit. No matter how cruel and careless people are, they will not be willing to give up on it. There are the journey we have passed by and the moon. It becomes part of a person and is truly involved in shaping the self. I think this is also something I like, and it can bring us the "ultimate beauty".
Maybe, everything started with a restaurant that "it was just ordinary at the time".
hopes that this list can provide more people with the possibility of encountering it.
