Preparation ingredients: noodles, cooking oil (lard), garlic, chili noodles, chicken essence, sugar, balsamic vinegar, extremely fresh flavor, soy sauce, oyster sauce, Lao Ganma, fragrant sesame oil, peanuts, and cucumber.
Method: Peel the garlic and chop it into garlic pasta, and add chopped garlic and an appropriate amount of chili pasta to the bowl (add it according to the degree of spicy food in person). Heat the pot and add cooking oil. The oil is burned until the green smoke is emitted. Pour the oil into a bowl to let the hot oil stimulate the garlic aroma of the garlic and the spicy taste of the chili noodles. Add an appropriate amount of chicken essence, a small amount of sugar, two spoons of soy sauce, one spoonful of balsamic vinegar, one spoonful of oyster sauce, two spoonfuls of Laoganma fermented black beans, and stir all the seasonings evenly. The amount of all the above seasonings is for reference only and needs to be adjusted appropriately according to personal taste.
Add appropriate amount of water to a pot and bring to a boil. Put the noodles under the noodles until they are completely dried. Do not cook the noodles as they are old, otherwise it will seriously affect the taste of the noodles. Then immediately put a large bowl of cold water in the pot to cool down quickly, and then remove the noodles. Add a few drops of sesame oil to the
noodles, and then stir the noodles and sauce evenly. Add an appropriate amount of shredded cucumber and a proper amount of peanuts to the bowl. Friends who have the conditions can also add a fried egg. At this point, a bowl of delicious dry noodles will be ready.
Tips:
1. The oil must be burned until 100% hot, otherwise the oil poured will not smell good. It is recommended to eat lard, because the noodles mixed with lard are very delicious and fragrant.
2. After the noodles are cooked, be sure to add cold water, or put it in cold water for a while. This way the noodles are not only more chewy, but also will not stick together during the mixing process.
