Beef noodles are very popular, but this bowl of goose noodles is completely different. The soup is delicious, and a small bowl of roe pepper is also to add some spicy flavor to the goose meat under the clear soup. This chili pepper is to grill the fresh green pepper on coal until it is slightly burnt, then beat it into pieces, and then add various seasonings such as soy sauce to dip it in goose meat and goose gizzards, which is perfectly matched.

The three most well-known ones in Guizhou are mutton noodles , Xingyi , Zunyi and Shuicheng (Liupanshui) mutton noodles. Although it is famous, it does not mean that Bijie does not have delicious mutton noodles. The mutton noodles here are cooked from a casserole, with black goat meat with skin. After one pot comes out, it is very hot. It won’t taste bad if you find a random store on the street, so I won’t recommend it.

Bijie, there are also many hot pots related to beans, such as fermented black bean hot pot, bean rice hot pot, and bean flower hot pot. I have also eaten these hot pots elsewhere, so I want to focus on eating dried tofu hot pot. After all, Bijie's Dafang County tofu is famous. Dried tofu must be a generous six-dragon dried tofu. Dafang is a county, and Liulong is a town. This sign is named as a place name, which is a great Chinese geography food.

This hot pot bottom is also extremely simple. generous dried tofu , oil residue is the soul, and then supplemented with coriander, local bitter garlic , and other side dishes are as you like, and you can add them.

Double dried tofu is not an ordinary taste, it has a fermented aroma, and the taste is as chewy as cowhide. It’s okay if you let me eat dried tofu. The oil residue is also very distinctive. As we all know, Guizhou people love to eat crispy whistle . In the eyes of outsiders, it is lard residue, but locals make seasonings such as cooking wine and dark soy sauce. This is the Plus version of lard residue, crispy whistle. The oil residue in the dried tofu is actually fried with pork belly slices, which is fragrant and chewy. The same ingredients, with the delicate cooking method, becomes a completely different delicacy. This is the essence of Chinese food.

When eating dried tofu hotpot, the locals like to eat a staple food called "corn rice". I thought it was yellow, but it looked white and finely ground. The aunt who made the rice said I couldn't get used to it. I forced a spoonful of corn rice to the rice, which tasted like dried powder. As expected, I couldn't get used to it. I still like large grains of white rice.

I originally wanted to eat roasted chicken sausages, but the chicken sausages were too oily and I don’t really want to recommend them. But the barbecue and sauerkraut fried rice are pretty good. Finally, when it comes to the bitter buckwheat cakes I bought on the street, I use a commonly used food evaluation: has its own characteristics, but I don’t like to eat . Buckwheat cake is a specialty of Weining . It is rich in Buckwheat . It tastes bitter but has a sweet taste. After eating this bitter buckwheat cake, it tastes soft and like rice cake, and tastes like green tea, but it is more bitter than green tea. The seller told me that eating too much this thing can lower blood pressure and blood lipids. I thought that this is mainly mostly carbohydrate. Bijie actually has many local delicacies, named after counties and towns.

For example, Weining Ham , this ham is well-made, but it is often regarded as Xuanwei Ham. Because of the inconvenience of transportation in the past, Weining and , Yunnan Xuanwei were only about 100 kilometers apart. Weining’s ham was often transported to Xuanwei’s distribution center and was sold as Xuanwei ham, so naturally it was not as famous as Xuanwei. Food also requires celebrities to advertise. Like Noden Ham , it is on the tip of the tongue, and the brand effect will arise. In fact, in which city in Yunnan or Guizhou does not have local ham making technology? I ate mushroom hotpot in Chuxiong. The hams placed in them were not from Xuanwei and Nuodengyun. They also produce them locally, but they are not famous.

Nayong Sour Soup Rice, because I don’t really have a cold in sour soup, so I didn’t try it. Bijie Tangyuan is quite famous, but I walked around the street and saw very little. Instead, I saw Bijie Tangyuan in Liupanshui . Lian Zhaluo, also known as Caidou , I have seen several restaurants on the street that mainly feature Caidou , but I didn’t try it.

I originally wanted to find a beef hot pot in Bijie. This hot pot is produced from Guizhou . I wanted to eat it last time but my companions dared not try it, but Bijie didn't find it, so I had to give up.
