Event content
(I) Food Competition: Carry out 6 series of single dishes: dried beef , fish, cold roll powder , chicken, beef soup pot, roast lamb, without restricting the cooking method, production form and seasoning method.
(II) Food display: Concentrate on displaying edible special flavor products in the state (only refer to edible categories).

(III) Registration scope and target: stores, enterprises, individuals and social groups engaged in catering and food processing in the state can voluntarily register for participation. There are no restrictions on the registration team or individual gender, age, ethnicity, occupation, etc.
(IV) Registration information: Those who register for the competition must submit three-certificate in one or five-certificate in one business license, front and back of ID card, and a copy of the food business license. Each participating team can register for any one or more of the 6 types of dishes in the food competition; those who register for the exhibition must submit a food business license or product certification certificate, and the display is not subject to the types or quantity of edible products that can be eaten by the exhibition.

2. Scoring criteria
(I) Food selection (10 points)
1. The ingredients selected by the contestants must have Wenshan local regional characteristics and ethnic characteristics, highlighting the local tastes and eating habits of Wenshan.
2. The food ingredients are selected to meet national food safety standards, and no foods that are harmful to the human body and cause adverse reactions.
3. When choosing animal and plant products in food ingredients, you should comply with national wildlife and plant protection laws and regulations, and do not use animal and plant products explicitly prohibited by the state.
(II) Operation process (10 points)
1. Cutting and processing: skillful knife skills, accurate knife skills, proper waste treatment, no waste.
2. Cooking techniques: Use the traditional local cooking techniques in Wenshan, control the heat well, and skillfully carry the pot and spoon (except for cold roll powder).
(III) The finished product score (80 points)
1. Taste: The taste is pure, the main taste is outstanding, the seasoning is appropriate, and there is no blurry smell, fishy smell, strange smell, etc. (20 points)
2. Texture: The heat is appropriate and the texture is clear, which conforms to its proper characteristics such as tender, smooth, refreshing, soft, glutinous, rotten, crispy, loose, and crispy. (20 points)
3. Appearance: The main and auxiliary materials are matched reasonably, the knife is delicate, the specifications are neat, the sauce is moderate, the color is natural, the plate is beautiful, and the tableware is coordinated with the dishes. (15 points)
4. Cultural connotation and creativity: The entries have Wenshan’s unique regional culture, ethnic characteristics and dietary customs, and have certain creativity and ideas. (10 points)
5. Nutrition and hygiene: separate raw and cooked foods, reasonable nutritional ratios, artificial pigments and inedible items are not allowed in the finished product, and tableware and plate decorations are clean and hygienic.(15 points)
3. Scoring rules
(I) Professional judges
Expert judges are composed of 7 industry experts (2 provincial and 5 state). The expert group scores account for 70% of the total score. The average score of each expert score is multiplied by 0.7 to the final score of the expert group.
(II) Public judges
Public judges consist of 100 people, and the score of the public group accounts for 30%. The score is voting. Each public judge can only vote at most 1 vote for each participating dish and no repeated votes are allowed. The total number of votes received by each participating dish is multiplied by 0.3 as the public score.
The final score and the public score of each participating dish are the final score of the participating dish.
Instructions for Participation in the First "Pomegranate Red" Food Competition in Wenshan Prefecture
1. Attach great importance to epidemic prevention and control work and strictly implement relevant requirements for COVID-19 prevention and control measures. Participants must wear masks, show their health code and itinerary code, and present a negative nucleic acid test certificate within 48 hours, wear the competition certificate to enter the competition venue in advance; and enter the venue in a corresponding way, obey the unified command of the staff to discharge sewage.
2. The contestants were dressed neatly and cleanly, and the chef wore chef's clothes, chef's hat, , aprons, and black clean leather shoes; the hair was clean and neat and not dyed, the men's head did not cover the collar, and the eyebrows were not covered in front; women's hair was not shawl, and the hair on the forehead did not block the view; men and women, the nail groove depth should not exceed 2 mm, and nail polish should not be applied; except for watches, no signs or accessories should be worn on their bodies;
3. The ingredients used by the contestants, the main, ingredients, special condiments, other embellishments and tableware, must be accepted by the inspection personnel before they can be brought into the venue. The raw materials of other contestants are not allowed to be used during operation. The utensils you carry will be kept by yourself after entering the site.
4. When operating, the contestants strictly implement the regulations on separation of raw and cooked materials. It is strictly forbidden to use toxic, harmful, rotten and deteriorated main and auxiliary materials, and it is strictly forbidden to use wild protected animals and plants explicitly stipulated by the state. All raw materials are allowed for initial processing on the site, but the preparation and seasoning must be done on site.
5. The selection activities are held in the form of a competition. Each dish is 7 people, and the time is 1 hour (except roasted lamb); 7 judges must be prepared for each dish for professional judges to taste and score. Another 100 public judges will be prepared to taste the rated dishes.
6. Obey on-site supervision and management, abide by competition rules and operating procedures, abide by competition discipline and order, and participate in the competition in a civilized manner. On-site supervision personnel will assist the contestants in completing the competition, find relevant problems and faults, and report and deal with them in accordance with the specifications.
7. During the operation, contestants must operate in a civilized and standardized manner, prevent all accidents and eliminate all dangerous operational behaviors. After the competition, quickly clean the countertops and the competition position.
