3. Development model
1. Localization model
. Brittany cider industry mainly reflects two "local". First, make full use of the local unique natural geographical and climate resources, explore cider raw materials with special local flavor, and further develop apples that were not suitable for direct consumption locally to develop fruity and fragrant cider. In addition, Brittany's cider industry brings together many advantageous resources to create "Breton" cider instead of cider in a certain city. With the help of local rich tourism resources, cider, as a regional specialty, can be spread to all parts of the world with the help of tourists. The characteristics of local production and local brewing make it more valuable after passing the real estate protection certification.
2, cooperative model
In the development of Brittany cider industry, the long-standing Vodian Cooperative has been formed. The role of the Vodian Cooperative is to concentrate local and nearby apple resources, and under the leadership of the chief bartender, develop flavored cider and carry out unified processing and sales. The cooperative provides technical services to farmers and promises each other that farmers ensure the organic nature of the raw materials supplied and ensures that they meet the cooperative's acquisition requirements. During the operation process, the cooperative is responsible for quality control, administrative management and profit distribution.
4. Experience reference
1. Variety specialization
Since the key to determining the flavor of cider is the raw material, in addition to making full use of natural conditions, suitable apple varieties are also very important. Since cider has different information on the sugar content, moisture and other information of the raw materials used is different from that of fresh food, the difference between the two is getting bigger and bigger, and it has formed a special variety for cider brewing and cannot be eaten [7]. It can be seen that the awareness of specialization of product raw materials should be enhanced, and the research and development efforts of sub-special varieties such as processing and brewing should be increased to make the best use of the goods.
2, product certification -edit
cider can only better reflect the value added brought by processing after it becomes a landmark product. The prerequisite for passing certification is to establish a product traceability system, which requires covering the entire process from production to factory delivery, and the recorded information includes the place of origin, producer, transportation information, etc. Such a transparent system will help strengthen consumers' recognition of certification results and be more willing to buy products. In addition, participating in large-scale evaluation activities will also help improve brand value and product value. On the one hand, in addition to increasing popularity, on the other hand, it is to borrow the "golden mouth" of professionals to achieve the purpose of verifying the quality of their own products.
