One year is a production cycle, which requires two feedings, three blendings, forty days of high-temperature koji making, and the Dragon Boat Festival in May. The steps include pressing the koji, storing the koji for six months, roasting the wine seven times, eight times of high-temperature accumulation and fermentation, and nine times of steaming.
