Shen Longqiang added that after putting the fish in the refrigerator, it must be opened if it needs to be taken out. If this action is repeated many times, the taste and nutritional value of the fish will be greatly reduced.
"Shenye Game" steamed fish dishes are adjusted according to the market price. For example, the price per kilogram of white beard is 46 ringgit per kilogram, and the price per kilogram of African fish (golden yam) is 34 ringgit per kilogram. The fish head dishes sold will be priced depending on the size of the fish head, generally ranging from 30 to 36 ringgit.
Shen Longqiang spent time pickling and stewing many dishes in this restaurant, hoping to present the best flavor to diners. "Pig hands must stew for an hour, and 15 to 20 servings of ginger duck will be marinated in a week, and the long-term duck meat will be more flavorful."
