1 After washing the black chicken, change the knife to cut it into large pieces. The chicken pieces for stewing chicken soup should be larger, and half the chicken is divided into 8-10 pieces. After peeling the yam, cut it into small pieces diagonally. Yam is excellent when choosing thick and straight. After washing the dried mushrooms, soak them in water for half an hour to set aside.
2 Add a little more cold water to the pot, add 10 grams of ginger slices and 0.5 grams of pepper, put the washed chicken pieces into the pot, and turn on low heat to blanch it. Wait until the water slowly boils, the chicken blood will be boiled out and the foam will be skimmed with a spoon. After the water boils, cook for one minute, then remove the chicken pieces and wash them clean and drain them for later use.
3 Add 30 grams of vegetable oil to the pot, the oil temperature is 150 degrees, add 20 grams of ginger slices and stir-fry. Pour the chicken nuggets into the pot, start stir-frying, and stir-fry out the water vapor of the chicken nuggets. When the surface of the chicken skin begins to shrink and you smell the aroma of the chicken nuggets, you can pour it into the pot, just completely missing the boiling water of the chicken nuggets.
4 After boiling on high heat, add all the soaked mushrooms and continue to boil until boiling. Transfer the chicken soup with the chicken nuggets to the casserole. Because the casserole is thicker and more evenly heated, it is especially suitable for stewing chicken soup. When the chicken soup in the casserole also starts to boil, change to the minimum heat and continue to simmer for 2 hours.
5 Open the casserole, add the yam and continue stewing. The yam will be very powdery in about 20 minutes. After 10 minutes of adding the yam, add an appropriate amount of salt according to your personal taste. I will add 5 grams of salt here. At the same time, add 30 rinsed wolfberry, continue to cover and simmer for 10 minutes, then turn off the heat.
