[Method]: 1. Clean the bought eels thoroughly, cut them into inches of pieces, but do not cut them off, put them in a boiling water pot and add cooking wine to blanch them, remove the mucus and take them out.
2. Pour appropriate amount of oil into the pot, add old ginger, stir-fry the garlic and stir-fry until fragrant. Add 2 spoons of light soy sauce, 1 spoon of braised soy sauce, and 1 spoon of bean paste and stir-fry well. Add appropriate amount of water and put the treated eels into the pot, and then add 2 peeled garlic together.
3. Bring to a high heat and simmer over medium-low heat for 20 minutes. When the soup starts to thicken, add appropriate amount of sugar to calm down. Turn to high heat and close the juice, you can turn off the heat. Sprinkle some chopped green onions before leaving the pot.
3. Fried beef with bitter melon sauce
[Ingredients]: 250 grams of beef tenderloin, 1 bitter melon, fermented black 10 grams, 1 egg white, 1 spoon of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of oyster sauce, a little salt, appropriate amount of sugar, appropriate amount of cooking wine, appropriate amount of oil, a little raw powder, 1 small piece of ginger, 2 cloves of garlic, appropriate amount of green onion
[Method]: 1. Clean the beef, cut it into thin slices, soak the bleeding water in clean water, then add cooking wine, a little salt, light soy sauce, dark soy sauce, oyster sauce, appropriate amount of sugar, egg white and a little raw powder, and marinate for 5 minutes.
2. Wash the bitter melon, cut it into slices after removing the pulp, and remove the white part inside as clean as possible to reduce the bitterness. Blanch the cut bitter melon in water, drain the water and put it in ice water prepared in advance.

4. Steamed hairy crabs
[Ingredients]: 6 hairy crabs, 1 piece of old ginger, appropriate amount of vinegar

6. Tomato sauce quail eggs
