The main ingredients for brewing soy sauce are: soybeans, wheat, bran, flour, crushed rice, , corn, etc. There are two main fermentation processes: high-salt diluted fermentation soy sauce , low-salt solid fermentation soy sauce .
Step first: Clean the soybeans and wheat prepared for soy sauce, soak them in a swelling and absorbing enough water, drain the water and steam them for about 6 hours.
Step 2 Body temperature fermentation: After the steamed soybeans are cooled at room temperature, put them in the fermentation room, seal the fermentation temperature to be controlled at about 37 degrees, stir evenly every three days, and stop fermentation when smelling soy sauce.
Step 3 brewing : Put the fermented soybeans into a wooden barrel, sprinkle salt and water on the top, cover with a lid and seal it, and brew it.
Step 4: After about 4 months of brewing and storing, after unsealing, the brewed soy sauce is filtered out with a leaked net.
Step 5: Put the filtered soy sauce into the soy sauce tank, put it in the sun for about 10-30 days, and then fill it and go on the market.
The production time for regular soy sauce is about 6 months.
