This recipe is so easy and it’s as healthy as pseudo-fried rice made with cauliflower. Stuff high-protein, low-fat tuna filling into zucchini for a combination that's naturally gluten-free, low-carb, and keto-friendly. The texture of the baked zucchini is creamy and tender, the tuna seasoned with black pepper, paprika, garlic and basil is juicy and the cheese on the surface melts just right. With one bite, the rich flavors and multiple textures all blend into your mouth. And it provides a super long-lasting feeling of satiety. Ingredients

  • 1 zucchini
  • Canned tuna 1
  • Sweet corn kernels 1 tablespoon
  • 2 cloves of garlic
  • Basil 1/2 small spoon
  • Mozzarella cheese 30g
  • Paprika 1/4 1 tablespoon
  • black pepper sauce 1 tablespoon
  • black pepper 1/4 teaspoon
  • salt 1/8 teaspoon

Methods

. Drain the canned tuna and stir in the sweet corn kernels, minced garlic and basil.

. Add chili powder, pepper, salt, and mix well.

. Cut the zucchini in half, scoop out the seeds and pulp, and leave about 1-1.5cm of the inner wall.

. Brush the inner wall of the zucchini with black pepper sauce, or other sauces you like: tomato sauce, sweet and spicy sauce, pizza sauce...or olive oil.

5. Fill in the tuna filling.

6. Sprinkle with mozzarella.

7. Preheat the oven to 190℃ in advance and bake for 20-25 minutes. If you like the zucchini a softer texture, grill it for 2 minutes longer.
