The Pinot Noir paradise in the Night Hill production area we mentioned earlier. Let’s talk about Chardonnay’s paradise-Bornecht today! Most white wines in the Burnchurch region are made of Chardonnay. If Night Hill is recognized as the top red wine region, then Burnchurchurch is the top white wine region. Of Wine Searcher’s “50 Most Expensive Wines in the World”, 14 are white wines, and 6 of them are from the same production area, Bernchurch. The white wine here is lively in style, generally with a deep golden color. The wine has the aroma of citrus fruits and grass, the taste is round and soft, the acidity is appropriate, and the aftertaste sometimes has the taste of hazelnuts.
Bornecht
Bornecht is located on the south side of the Cote de Nuits, starting from Ladoix-Serrigny in the north and ending at the south to Maranges in the south. It is collectively known as the Cote de Or with the Night Hill. This place is home to the world's top dry white wines and famous red wines, and is one of the most famous wine regions in Burgundy.
Born Hill stretches for more than 20 kilometers, with a vineyard area of 5,980 hectares, and the slope is relatively gentle and wide. The underlying soil is marl limestone in the Middle Jurassic period, and the topsoil is clay rich in calcium, and the bottomsoil is soil rich in iron ore. Compared with night hills, its climate is milder, but it also has the danger of hail.
Producing Area Grading
In Bernchurch, the basic Burgundy AOC is Bernchurch Village AOC-Côte de Beaune Villages, a village-level AOC named in Bernchurch, which is a village-level production area other than Aloxe-Corton, Pommard, Volnay and Beaune. On the top of the Bern Hills, there are 4 vineyards using a confusing name of origin - AOC-Côte de Beaune. AOC-Hautes- Côte de Beaune is another land named after the hillside land located mainly west of Beaune. "Godton-Cortons" in Aloxe-Corton is the only red wine super park in Bernchurch. There is also a special garden in the community that produces great white wines, namely Corton-Charlemagne (the area extends to Pernand and Ladoix), while the special fields of the Manhache family are located further south, namely Puligny-Montrachet and Chassagne-Montrachet.
Borne Producing Area
Borne is the center of the Burgundy wine trade and is now divided into two by the high-speed rail tracks passing here. The west is an ancient hillside with vineyards and ancient towns, and is home to wine merchants who have been engaged in the wine trade for a long time. There are many modern breweries gathered in the east. The Bourne region now has 34 first-class vineyards. In the past, the wine labels of local wines (including surrounding areas) could be named "Beaune", but since Beaune was included in the legal production area in 1936, only the wine labels of wines made from grapes in the production area can be marked "Beaune". The region mainly produces red wines made from Pinot Noir. In recent years, with the increasing demand for Chardonnay white wines in the international market, the production area has also increased the production of white wines. Today, the production area produces about 300,000 bottles of white wine each year, accounting for 20% of the total wine production in the production area. It is worth mentioning that since 1859, wine merchants in the area have begun to hold the famous "Open Auction Bidding Conference for the Vineyard Production of Bourne Charity Hospital". This is not only a grand event in the local wine jar, but also indicates the trend of wine prices that year.
Pernand-Vergelesses is located in the northernmost mountainous hills of the Bernchurch. Because it is sandwiched between, the vineyards are protected by the double protection of the Cold Hill and the slopes of the eastern hills to avoid local prevalent winds. The lower slopes are slimy limestone, which also has the components of "chaillots (residual chert in siliceous limestone). The hillsides with moderate height are limestone and pebbles, which are very suitable for planting Pinot Noir. The hillside at the top is brown and yellowish mud, which is perfect for growing Chardonnay.

Bomad is between Bourne and Volnay, with soils of limestone and red clay. Hard limestone makes it necessary for grapes to go deep underground to find water sources, which is conducive to the strong development of grape root systems and absorbs more nutrients. The famous French wine tasting master Raymond Dume once said: "The secret of Bordeaux is in the cellar, and the secret of Burgundy is in the land." The Boma region's emphasis on land and roots has always been a tradition. The red wine here has always been recognized as a typical burgundy.

Volnay is located in the southwest of Poma, with the soil mainly limestone and clay. Because the wine produced is very soft and delicate, it is different from the style of the neighboring village, and its fame is also gained. Only red wine is produced here. Compared to Boma's strength, Volnay's red wine is very soft and elegant. Typical Wolnay red wines are generally described as the most elegant and feminine wines of Burgundy red wines. They tend to be full of aroma, soft and wonderful taste, and very fine tannins.

Oxey-Duresses is located in the Saint-Romain valley. The Celtics and Gauls have started brewing here a long time ago. This place once belonged to Cluny Monastery, where monks of the monastery planted grains and grapes. The wine industry in the producing area has been passed down to this day. Finally we have to mention: Bourne Works House, this is one of the must-see places for real wine enthusiasts to visit Burgundy. Bourne's prosperity today is inseparable from a couple: Nicolas Rolin and his wife Guigone de Salins. Rolling was the prime minister of the 15th century Burgundy Principal. Seeing Burgundy in the Hundred Years of War in Britain and France and the people were in vain, Prime Minister Rolling donated all the wealth accumulated in his life to build a hospital for helping the poor, which is the famous Bernese Working House.
