Chaoshan rice cakes have a long history, probably more than 500 years ago. Red peach cake is named after its shape of peach fruit. Peach fruit symbolizes longevity, so making red peach cake reflects the wish to pray for blessings. During the eighth festival of every year, almost every household will make red peach cakes to worship ancestors and gods. The shape of "shou peach" is believed to mean longevity and good luck; Red symbolizes prosperity and joy. Ingredients
- Kueh skin (steamed fruit sticks) 750g
- snow powder (can also be tapioca flour) 250g
- corn oil 15g
- red yeast rice powder 5g
- fillings
- glutinous rice 250 grams
- Japonica rice or sticky rice 250 grams
- iron supplement (dried halibut) 3
- 15 mushrooms
- shrimp 60 grams
- appropriate amount of garlic
- appropriate amount of fragrant rot sticks
- salt, appropriate amount of five-spice powder
Recipe Steps
. Fry the iron supplement until cooked After cooling, crush it and set aside. . Soak the mushrooms and dried shrimps in advance, then stir-fry in hot oil to bring out the fragrance of the mushrooms. . Crush the fragrant curd sticks (Chaoshan dialect) and set aside. Try to break it up as little as possible, otherwise it will burst. The skin . The rice should be simmered in advance, and then stir-fry the garlic and mushrooms for a while. Add the seasoning and mix evenly as usual for fried rice. . After the rice noodles are steamed, knead them while they are hot.6. Add snow powder immediately after steaming. (It seems that tapioca starch or wheat starch can also be used. Snow powder is Chaoshan dialect. I am not sure what kind of powder it is.) After adding snow powder, you can knead the rice dumplings. When kneading is not sticky and elastic, add some oil. Add oil because the skin of the kueh will be shiny and more beautiful
7. Once the kueh is printed, put it in boiling water and steam it for 20 minutes before taking it out. You can fry or steam it if you want to eat it. Personally, I prefer frying it because it is more fragrant
