一、小酥肉
1、準備食材:裡脊肉、料酒、食鹽、胡椒粉、蒜瓣、雞蛋、炸酥肉專用粉
2、小酥肉的做法:
(1)裡脊肉洗凈切成長條狀,蒜瓣切末。
(2)腌制裡脊肉:頭條放入碗中,加入適量的料酒、食鹽、胡椒粉、蒜末,戴上一次性手套,充分抓拌均勻,腌制20分鐘備用。
(3)調麵糊:碗中倒入炸酥肉專用粉,打入一枚雞蛋,加入適量的食鹽和胡椒粉,用筷子充分攪拌均勻,成流動的麵糊備用。

⚠️炸酥肉專用粉,是小酥肉,炸出來是否酥脆的關鍵,專用粉,要比普通的麵粉,炸出來的肉更加酥脆可口,大廚都在用的粉。
(4)將腌制好的裡脊肉,均勻地裹上一層麵糊,鍋中倒入適量的油,待油溫七成熱。
(5)下入裹好麵糊的裡脊肉,炸至定型撈出來,待油溫升高再復炸一次。
(6)炸至金黃酥脆撈出來控油,再盛入盤中,撒上孜然粉和辣椒粉調味即可。
